When ever I make this salad everyone raves about how rich and delicious it is. My friend would always say ” its so special ” So it became Maria’s Special Egg Salad. Ok let’s go with that name! So everyone has called it that ever since.

It truly is a scrumptious treat. Perfect for lunches, parties, bridal shower tea sandwiches. Really anything you can think of. We could never get over the flavors of the bland and dry egg salad.

After reading through a few different recipes a few years ago my friend Sandy and I came up with this recipe. Sandy gave me most of the credit because she threw in the towel as she says after the second batch of eggs!

In the end this is what we decided was the best recipe.

The Best Egg Salad

This is truly the best egg salad recipe we have ever had.It is super rich and so creamy delicious. We used to order egg salad sandwiches when we went out for lunch all the time. Now we just can’t We are so spoiled with this.

This is the best egg salad! It will make the best sandwiches you ever had!

Did you know that part of making a great egg salad is making sure you cook the eggs properly? Make sure you do not over cook your eggs. The egg white should be tender and the yolk should be yellow and creamy. an over cooked eggs will result in a dry egg salad.

This delicious mixed salad of eggs and other goodiesis perfect for a luncheon, bridal shower, party or as an anytime sandwich. This is perfect for finger sandwiches, on a bagel or croissant. It can be served and smeared on anything.

We make a batch of his on Sunday’s for lunches during the week. You can pretty much eat this with a fork but we like it on crackers or a nice hearty bread. Serve it over your saladfor a nice light dinner too.

You want to make sure to use a good quality mayonnaise. It is very important for a great egg salad. We love a heavy creamy mayo.

We also don’t like anything like celery, onion or chopped pickles. Not because we don’t love those things but because we feel it takes away from the flavor of the egg salad. We have made it both ways. Honestly plain and simple won hands down for us.

I remember when I was a kid I used to hate eggs. Eggs of all kinds. You could not get me eat them no matter what. My how times have changed. Our tastes sure do change as we get older. And for the better thankfully.

Now not only do we love this egg salad but can easily eat hard boiled eggs for a grab and go breakfast or as snack. And We probably have dinner for breakfast at least every few weeks or so. We love fried eggs or poached eggs with a nice runny yolk.

Once in awhile we will make cheesy scrambled eggs. They are just scrambled eggs with shredded cheese. Also delicious and a nice change of pace.

What makes this egg salad special

After trying what seemed like a gazillion recipes for egg salad we put a little bit of this and a little bit of that together. We loved the flavor of the spices in this rendition and the creaminess is unsurpassed.

And what makes it super special is the creaminess and tang of the cream cheese. This is just the right amount of cream cheese and mayonnaise and spices with eggs. It’s what makes this really special.

How do you make this Special Egg Salad

  • Placeeggsin a large saucepan. Cover them with cool water by 1 inch
  • Slowly bring water to aboilover medium heat. When the water has reached a boil, cover and remove from heat.
  • Let sit 12 minutes. Rinse with cold water and peel eggs.
  • In a bowl beat cream cheese until smooth.
  • Add mayo, sugar, onion, powder, garlic, powder, salt and pepper.
  • chop and fold in eggs.
  • Cover and refrigerate for 1 hour.
  • Serve on your favorite bread, lettuce cups, celery or off the spoon!

How Long Does This Last Once It’s Made

If stored in an airtight container in the refrigerator this salad can last for 3-4 days. But we never ever have it last that long. I would say if you want a lot of left overs then make a double batch! Because this is going to be a definite favorite!

A Great Low Carb Meal

This recipe for egg salad is perfect if your eating a low carb diet. I mention in the recipe that you can use sweetener instead of sugar. The rest of the recipe for My special Egg Salad might as well be called low carb egg salad.

It is a great healthy lunch or snack or even breakfast if your watching your carbs. Serve it on a lettuce wrap with some bacon or avocado and you have a perfect low carb meal.

A friend once asked me if I had any suggestions as to what else I would add to this just to change things up. Then we kind of just looked at each other and laughed. We would never change this up.

If you want to make the BEST egg salad sandwich make this egg salad! You won’t be sorry. Try it on different breads. We love it on a croissant or on dark rye. Pumpernickel. Really any hearty bread is good. But you pick your favorite and give it a try. any one you chose you will be eating the best egg salad sandwich ever!

Seriously this is simple yet amazingly delicious and doesn’t need any changing. Not in the opinion of anyone that has tried it anyways. You should try it and form your own opinion.
