These restaurant-style quick and easy yeastless bread dinner rolls are the perfect side dish for pasta, chilli or any other family meal for that matter!

Quick and super easy to make, these 20 minute dinner rolls are no knead and only use 5 ingredients. If you’re looking for a rustic, hearty roll that requires no yeast and no rise, this is the recipe for you.

The great thing? There’s no need to wait for these beauties to rise either.

Oh, and don’t worry if you’ve run out yeast – these restaurant-style rolls contain no yeast!

IMPORTANT NOTE BEFORE YOU START BAKING

These rolls are chewy and light on the inside with a crusty exterior, just so you know what to expect.

Because they’re baked in a muffin tin, they do come out looking a little cupcake like, but don’t let their appearance fool you, they taste divine!

Oh, and because these dinner rolls are no yeast, you’ll want to use the freshest of ingredients to help them ‘rise’ a little more.

If your flour and baking powder are old (especially if you’re using all-purpose flour), your rolls may turn out flat. Leavening agents are good for about 6 months on a shelf.

Even if your ingredients are ‘fresh’ from the store, sometimes grocers shelve them for a while before selling.

If in doubt, add a 1/2 teaspoon of extra baking powder to the recipe to help them rise.

GRANDMA’S 20 MINUTE YEASTLESS DINNER ROLLS (ORIGINAL RECIPE)

Prep Time: 5 Minutes

Bake Time: 18-20 Minutes

INGREDIENTS AND MATERIALS NEEDED

This mixture can make up to 6 dinner rolls (depending on size of the muffin tin you use). Adjust according for smaller or larger portions.

– 1 Cup of Flour (we used all-purpose, although readers have tried self-raising too. We don’t recommend bread or wholegrain flour)

– 1 1/2 Teaspoons of Baking Powder

– 1/2 Teaspoons of Salt

– 1/2 Cup of Milk (Room Temperature)

– 2 Tablespoons of Mayonnaise (you can also use the fast food packet kind too)

– 1 Tablespoon of Oil (for greasing muffin tin)

– Mixing Bowl

– Whisk

– Muffin Tin

– 1 Teaspoon of Garlic Powder (optional)

– 1 Teaspoon of Crushed Rosemary (optional)

– 1 Teaspoon of Italian Seasoning (optional)

BAKING NOTES SPECIFIC TO THIS RECIPE

Most recipes call for room temperature ingredients (like this one!), and that’s simply because when at room temperature, ingredients such as butter, eggs and milk form an emulsion which traps air.

This leads to fluffier, softer bread with lots of airy holes.

Cold ingredients, on the other hand, lead to a dense mixture, which leads to a dense, flat roll. No-one wants a dense flat roll!

If your dinner rolls are browning excessively, remove them from the oven and make an aluminium foil ‘tent’ to shield them, and return them to the oven.

HOW TO MAKE GRANDMA’S DELICIOUS DINNER ROLLS

1. Gather all of the required ingredients.

2. Combine the flour, salt, baking powder, milk and mayonnaise (and herbs if you’re making the Italian seasoned rolls) together into a mixing bowl.

3. Using a whisk, smooth the mixture out, making sure to get rid of any flour lumps.

4. With your oil (either from a bottle or a spray-can), grease the muffin tin.

5. Separate the dough into equal sized lumps, making sure to add equal amounts to each ‘muffin’ holder.

6. Preheat the oven for 3-5 minutes at 375 F (190 C).

7. Place the dinner rolls in the oven and bake for 18-20 minutes, again at 375 F (190 C), until golden brown.

As more and more of our lovely readers tried this recipe, we received more and more questions asking about what they could use instead of mayonnaise.

So, we did a bit of trial and error with lots of different ingredients.

Some batches came out awful, others came out okay, and then we hit on an alternative that came out perfect every time!

They only require 3 ingredients to make them pretty soft, which is always a bonus.

The recipe in total calls for 6 common ingredients found in most kitchens.

Using this recipe, you can make dinner bread rolls that don’t call for yeast.

Baking powder is the substitute for yeast in the dough, so there is no rise time or proving, similar to the original recipe.

You can also add in the optional italian herbs seasoning here too as used in the original recipe for a seasoned dinner roll. It’s still an easy yeastless bread dinner roll recipe!

They are ready in about 30 minutes including prep time, so you can make these simple no yeast dinner rolls right before dinner. No fuss!

INGREDIENTS & MATERIALS NEEDED

  • 3 sachets baking powder (this roughly equates to 3-4 teaspoons)
  • 2 cups plain yogurt
  • 1 cup olive oil
  • 2 teaspoons salt
  • 1 cup of all purpose flour or white (add more if dough too sticky)
  • baking tray/baking sheet
  • parchment paper (if using baking sheet)
  • whisk
  • beaten egg yolk (optional – for golden brown look)
  • 1 teaspoon garlic powder (optional – Italian seasoning)
  • 1 teaspoon crushed rosemary (optional – Italian seasoning)
  • 1 teaspoon Italian seasoning mix (optional – Italian seasoning)

HOW TO MAKE THESE NO YEAST DINNER ROLLS

Preheat oven to 370F (190C). Line a baking sheet with parchment paper or lightly grease muffin tin/baking tray.

  1. Combine baking powder, oil, yogurt, and salt (and herbs if making Italian style) into a large mixing bowl.

2. Sift all purpose or white flour, making sure to remove out any lumps. Gradually add more flour into the wet mixture until the dough holds together. It should still be moldable though.

3. Using your hands, roll the dough into medium sized balls and place them either in a baking tray or on a baking sheet lined with parchment paper.

4. For that golden bronzed look, wash them slightly with beaten egg yolk and bake for about 20 minutes.

FREQUENTLY ASKED QUESTIONS AND KEY BAKING TIPS

Try not to use much flour. Add the flour gradually until everything holds together. The brand and age of flour you use may also yield different results. Try to use fresh flour where possible. It’s fine if the dough is a bit sticky.

Use a little oil (we used olive oil in but you can use whatever oil you like) to wet your hands and make small balls of dough.

You can use self rising flour if you wish. Self rising flour already has baking powder in it, but to be on the safe side, I would still add the 1- 1/2 extra teaspoons of baking powder to ensure a better rise.

You also don’t need to add any water to these yeatless dinner roll recipes. The mayonnaise/milk or yoghut and oil combo is what gives the rolls their softer texture.
